Why can't i keep my fish tank ph up?

first forget about the PH fish can addapt to the PH change over time. Foucus on the ammonia level. your tank is still cycling so add fish slowly. then after your tank is cycle. remove any drifwood that could release tannins into the water. if your tap water Ph is low then add some calicous rock or a powder that raise ph.
